INOVASI PANGAN DESA TASIKREJO GIAT 16 UNNES MENGUBAH HASIL PERIKANAN LOKAL IKAN NILA JADI NUGGET LEZAT DAN BERNILAI JUAL TINGGI

Abstrak

Tasikrejo Village, located in Ulujami District, Pemalang Regency, is a coastal area with abundant brackish water aquaculture potential, particularly tilapia fish. However, local tilapia utilization has been limited to selling fresh fish to middlemen and simple household consumption. This condition results in low economic added value and suboptimal fish consumption among children due to limited processing variations. This UNNES Giat 16 Community Service Program aims to educate and train the community of Tasikrejo Village through mentoring and the "Tilapia Fish Nugget Demonstration" as a form of food diversification based on local potential. The implementation methods included field observation, interviews with village officials and the Family Welfare Movement (PKK), and direct practical demonstrations involving PKK cadres and Karang Taruna. The results showed an increase in technical understanding and community skills in processing fresh tilapia meat into hygienic, practical, and highly economic frozen food products. The tilapia nugget innovation effectively disguised the fishy aroma and eliminated bone constraints, thereby increasing acceptability among children to support family nutrition and stunting prevention. Furthermore, the skills acquired open up opportunities for establishing new Micro, Small, and Medium Enterprises (MSMEs) for the coastal community sustainably.
