KAJIAN GASTRONOMI MIE GOMAK SEBAGAI REPRESENTASI BUDAYA KULINER BATAK DI PANGURURAN KABUPATEN SAMOSIR

Mie Gomak merupakan makanan tradisional khas Batak Toba yang menjadi identitas budaya masyarakat di Pangururan Kabupaten Samosir. Penelitian ini bertujuan untuk mengkaji gastronomi Mie Gomak sebagai representasi budaya kuliner Batak. Penelitian menggunakan metode deskriptif kualitatif melalui wawancara dan dokumentasi terhadap pelaku UMKM serta tokoh adat Batak. Hasil penelitian menunjukkan bahwa Mie Gomak memiliki ciri khas pada penggunaan rempah tradisional dan teknik pengolahan “gomak” yang masih dipertahankan. Mie Gomak juga memiliki kandungan energi sebesar 829,1 kkal, protein 25,5 gram, lemak 41,7 gram, dan karbohidrat 90,5 gram. Selain sebagai makanan tradisional, Mie Gomak memiliki nilai sosial budaya dan berperan dalam mempererat hubungan masyarakat. UMKM turut berperan dalam pelestarian Mie Gomak melalui pelestarian resep, teknik pengolahan, dan promosi kuliner khas Batak Toba.
Mie Gomak is a traditional food typical of the Toba Batak people which is a cultural identity of the Pangururan community of Samosir Regency. This study aims to examine the gastronomy of Mie Gomak as a representation of Batak culinary culture. The study used a qualitative descriptive method through interviews and documentation with MSMEs and Batak traditional leaders. The results show that Mie Gomak is characterized by the use of traditional spices and the "gomak" processing technique that is still maintained. Mie Gomak also contains 829.1 kcal of energy, 25.5 grams of protein, 41.7 grams of fat, and 90.5 grams of carbohydrates. In addition to being a traditional food, Mie Gomak has socio-cultural value and plays a role in strengthening community relations. MSMEs also play a role in preserving Mie Gomak through preserving recipes, processing techniques, and promoting typical Toba Batak culinary.
