Abstrak

Penelitian ini bertujuan untuk menganalisis dan menyusun laporan kos produksi pada dua jenis UMKM bakso di Kota Jambi, yakni usaha bakso berbasis pesanan (job order costing) untuk acara pernikahan dan usaha bakso berbasis proses (process costing) yang beroperasi secara harian. Metode penelitian yang digunakan adalah studi kasus deskriptif dengan pendekatan kualitatif dan kuantitatif melalui wawancara langsung kepada pemilik usaha. Hasil penelitian menunjukkan bahwa usaha bakso pesanan dengan kapasitas 300 porsi memiliki total kos produksi sebesar Rp3.650.000 atau Rp12.167 per porsi dengan harga jual Rp30.000 per porsi sehingga menghasilkan margin laba sebesar Rp17.833 per porsi (59,44%). Sementara itu, usaha bakso proses (Warung Bakso Prosty) dengan produksi rata-rata 50 porsi per hari memiliki kos produksi harian sebesar Rp438.000 atau Rp8.760 per porsi dengan harga jual Rp13.000 per porsi dan margin laba Rp4.240 per porsi (32,62%). Penelitian ini menemukan bahwa kedua UMKM belum menerapkan pencatatan kos produksi secara sistematis sehingga rentan terhadap kesalahan penetapan harga. Penerapan akuntansi biaya yang baik sangat diperlukan untuk mendukung keberlanjutan usaha.   

This study aims to analyze and compile production cost reports for two types of meatball MSMEs in Jambi City: a job-order costing meatball business for weddings and a process-based meatball business operating daily. The research method used was a descriptive case study with qualitative and quantitative approaches through direct interviews with the business owners. The results showed that a job-order meatball business with a capacity of 300 servings had a total production cost of Rp3,650,000, or Rp12,167 per serving, with a selling price of Rp30,000 per serving, resulting in a profit margin of Rp17,833 per serving (59.44%). Meanwhile, a processed meatball business (Warung Bakso Prosty) with an average production of 50 servings per day had a daily production cost of Rp438,000, or Rp8,760 per serving, with a selling price of Rp13,000 per serving, and a profit margin of Rp4,240 per serving (32.62%). This study found that both MSMEs had not implemented systematic production cost recording, making them vulnerable to pricing errors. Good cost accounting practices are essential to support business sustainability.
